Watermelon Salad with Feta & Fresh Mint

A nice refreshing salad perfect in the summertime!









1 cup Balsamic Vinegar

4 oz Baby Arugula, washed & dried

1 1/2 TBSP Extra Virgin Olive Oil

Salt, to taste

Freshly Ground Black Pepper, to taste

2 cups 1" Diced Seedless Watermelon

1/2 cup Finely Crumbled Feta Cheese

1/3 cup Kalamata Olives, drained, pitted

Fresh mint, chopped


Prepare Balsamic Drizzle: Place vinegar in a small saucepan over medium heat. Simmer until vinegar is reduced to a third, about 15-20 minutes. Allow to cool to room temperature. Set aside.


Prepare Salad: Place arugula in a medium mixing bowl, lightly dress with olive oil. Season with salt and pepper and reduced balsamic vinegar. Toss to coat. Divide between 4 plates or bowls and top with watermelon chunks, feta cheese and olives. Sprinkle with fresh mint.
