Spinach Artichoke Mummy











16 oz pizza dough

4 oz mozzarella block

1 egg, beaten

2 cups canned artichokes, chopped

10 oz Frozen spinach, thawed & drained

16 oz Cream cheese, softened

3/4 cup Mayonnaise

1 cup Parmesan cheese

3 TBSP garlic, minced

1 tsp Red Pepper flakes

1/2 tsp salt

1/2 tsp black pepper


Preheat oven to 375 degrees F.


Knead your pizza dough. Cover with a warm damp cloth for about 20 minutes to finish rising. Knead dough a little more and shape into an oval shape. Indent one end of the oval to create a "head" for the mummy. Brush your dough with the egg wash and bake in oven for 18 to 20 minutes or until golden brown. While the dough is baking, make your dip (see instructions below). Remove from oven and start placing "wrap" on mummy by placing mozzarella strips in a criss cross design. Put back in oven just for 1-2 minutes to melt cheese.


Remove from oven and place olive slices on your mummy for the eyes.


To make dip: In a large mixing bowl combine the softened cream cheese with the mayonnaise. Mix in the artichokes, spinach and parmesan. Add the garlic, red pepper flakes, salt and pepper to the mixture. Spread into a shallow baking dish. Bake for about 35 minutes or until top is browned slightly and dip is bubbly.


Remove from oven and allow to cool for at least 10 minutes before serving. Transfer to your mummy that has been hold out in the belly.
