Here is a very tasty appetizer that you can make for a snack before a meal or for a great addition to the table at a party. It's a favorite in our house!
24 thin slices French baguette
2 tbsp unsalted butter
1 large head garlic, separated & peeled
12 oz ripe Brie cheese, rind removed, room temperature
1 pinch Cayenne pepper
1/8 cup chopped fresh arugula
Preheat oven to 350 degrees. Place baguette slices on cookie sheet and bake until golden brown or approximately 8-10 minutes. Set aside to cool.
Melt butter in a small oven proof skillet over medium heat. Add garlic and toss to coat. Transfer skillet to oven and bake until knife pierces garlic centers easily. (Approximately 15-20 minutes.) Cool slightly.
Transfer roasted garlic to a bowl and mash with a fork.
Add brie and cayenne to garlic and mix well. Preheat broiler. Spread some cheese mixture on each toast. Season with pepper. Broil just a few minutes until cheese bubbles. Sprinkle with arugula and serve on a platter.
