Mini Potato Skins

Do you love potato skins? You can make your own at home for parties! What is even cuter is having mini bite size appetizer portions of potato skins, a quick yummy bite for your guests as they gather.
15 Small Baby Potatoes
6 slices Bacon, cooked & crumbled
2 TBSP Unsalted butter, melted
kosher salt
freshly ground black pepper
2 cups Cheddar cheese, finely shredded
1/3 Cup Sour Cream
2 TBSP fresh chives, finely chopped
Preheat oven to 400 deg F. Position rack in middle of oven.
Wash potatoes and pierce all potatoes with a fork. Bake until the skins are crispy and cooked through (a knife will slice easily into the potatoes), about 40 minutes. Cool on a wire rack for 10 minutes.
Slice each potato in half lengthy-wise and scoop out the center. Place scooped potato aside in a bowl and save for later. Arrange the potato halves skin side down on a baking sheet. Brush the insides and skin with melted butter and sprinkle with salt & pepper. Turn halves over & fill each potato half with cheddar cheese & bacon and cook for 2 more minutes until bubbly.
Remove halves from oven & top each with a small dollop of sour cream and a sprinkle of chives. Serve & enjoy!
