Mini Caprese Pizzas

Oh Boy! These are so delicious. It is hard to eat just one! Enjoy!
2- 13.8 oz rolls Pizza Dough
1/4 cup All Purpose Flour
1/4 cup Garlic Flavored Pizza Sauce
8 oz Fresh Mozzarella
12 Cherry Tomatoes, finely sliced
1/4 cup Shredded Mozzarella
1/3 cup finely shredded fresh Basil Leaves
1/4 cup Balsamic Glaze
Preheat oven to 425 deg F. Roll out pizza dough onto a floured working surface. Form into 2 balls and let rest on counter for an hour. While dough is resting, prep all of your ingredients.
Spray a muffin tin with olive oil spray. Prep all ingredients by measuring out garlic sauce, slicing fresh mozzarella into small slices, slicing cherry tomatoes into small slices, and slicing basil into finely shredded slices.
Once dough has rested, take each ball and cut each ball into 6 equal portions. Roll each smaller individual ball of dough and press into each muffin tin section spreading out bottom and sides as much as you can.
Layer ingredients in the following order in each mini pizza:
2-3 slices fresh mozzarella
tsp of garlic sauce
tsp of tomatoes
sprinkle of fresh basil
1-2 slices more of fresh mozzarella
a little more mozzarella slices if you wish
drizzle of balsamic glaze
Bake for 12-15 minutes, or just until it is golden brown and just crispy on the edges. Remove from oven and let sit for a few minutes on counter.
To serve, arrange on pretty plate and drizzle a little more balsamic glaze and another sprinkle of fresh basil. Enjoy!
