Fig & Gorgonzola Crostini with Caramelized Onions

Extra Virgin Olive Oil

1 medium yellow onion,thinly sliced

1 tsp sugar

1 tsp minced fresh rosemary

salt, to taste

ground black pepper, to taste

1 baguette, sliced diagonally

18 ripe figs (or 1/2 jar fig jam)

1 tsp rosemary, to sprinkle on top


Preheat a broiler & adjust the rack about 4" from the heating element. Brush both sides of the baguette slices with oil and broil for just a minute or two on each side, just until golden. Set baguette slices aside.


Warm 3 TBSP oil in a medium nonstick skillet over medium-high heat. Add the onion & cook, stirring until soft, about 3 minutes. Sprinkle the sugar over the onions & stir well. Turn the heat down to low & spread out the onions in pan. Cook until the onions are golden brown, about 15 minutes.


If using fresh fig slices: Layer crostini with some onion, a fig slice & then the gorgonzola. Put under the broiler just until cheese melts. Sprinkle with some rosemary and serve!


If using fig jam: Layer crostini with a spread of fig jam, onion & then some gorgonzola cheese. Put under the broiler just until cheese melts. Sprinkle with some rosemary and serve!
