2 seedless cucumbers
8 oz Goat cheese, softened to room temperature
Fresh thyme, chopped
Peel cucumbers lengthwise skipping sections to leave a striped effect. Slice cucumbers into 1 " pieces. Set aside.
Spread goat cheese (or you may put it into a piping bag and pipe it) onto each cucumber slice. Top each boat with sun-dried tomato and then finish off with chopped fresh thyme.
Refrigerate until ready to serve.
