1 lb Ground Beef
Salt & Pepper, to taste
4 slices Blue Cheese OR 6 oz Crumbled Blue Cheese
4 pieces Butter Lettuce
4 slices tomato
2 shallots, sliced thin
3/4 cup vegetable oil
4 TBSP Mayonnaise
4 buns (brioche, italian, potato)
Remove beef from refrigerator 30 minutes prior to cooking. Preheat grill to medium high. (You can also cook this in a pan on the stovetop if a grill is not available)
Add vegetable oil to a small frying pan and heat to high. Add shallot slices and then turn down to medium heat to fry lightly until golden. Remove with a slotted spoon and drain on a paper towel.
Season ground beef with salt and pepper and divide beef into 4 equal portions that are 1/2" thick. Cook for about 2 to 3 minutes per side for medium-rare. You are looking for a brown crust and nice grill marks. If using slices, top each burger with a blue cheese slice or sprinkle with blue cheese crumbles. (Another additional option if using crumbles is that you can stuff each burger with the cheese inside the burger before grilling.) Transfer burgers to a paper towel lined plate to drain off excess fat.
Add vegetable oil to a small frying pan and heat to high. Add shallot slices and then turn down to medium heat to fry lightly until golden. Remove with a slotted spoon and drain on a paper towel.
Toast the buns under a broiler until golden brown.
To assemble burgers: spread mayonnaise on each bun bottom. Top with lettuce, the cheeseburger, tomato and crispy shallots. Finally top with top bun and serve! Enjoy!
